Ingredients
For the Chia Pudding
1 can full-fat coconut milk
1 cup milk of choice
6 tablespoons chia seeds
2 tablespoons honey
1 teaspoon vanilla extract
For the Pineapple Layer
2 cups fresh Maui Gold Pineapple, finely diced
1 tablespoon Lahaina honey
1 teaspoon lime juice
2 tablespoons unsweetened shredded coconut
For Assembly
2 cups Greek yogurt or coconut yogurt
Extra shredded coconut for topping
Fresh mint, optional
Instructions
Make the chia pudding
In a medium bowl, whisk together the coconut milk, milk, chia seeds, honey, and vanilla extract. Let sit for 10 minutes, then whisk again to break up any clumps. Cover and refrigerate for at least 3 hours or overnight.
Prepare the pineapple
In a separate bowl, stir together the diced Maui Gold Pineapple, honey, lime juice, and shredded coconut. Let sit for 10 to 15 minutes to allow the flavors to come together.
Assemble the parfaits
Spoon a layer of chia pudding into glasses or jars. Add a layer of yogurt, then top with the pineapple mixture. Repeat as desired.
Finish and serve
Top with extra shredded coconut and fresh mint if using. Serve chilled.
